Digital magazine and muffin recipe.

Been thinking about these lately….wondering if I should get myself one.

A little while ago I posted about some yummy muffins I made….they were Zucchini and Apple Muffins.

I said I would give you the recipe for them and so here it is.
I got it out of the Australian Better Homes and Gardens magazine September 2011 issue.

Zucchini and Apple Muffins

Preparation Time: 15 mins

Cooking Time: 20 mins

Makes 12

Ingredients:

2 cups self-raising flour

2 teaspoons ground cinnamon

¾ cup brown sugar

1 zucchini, grated

1 red apple, skin on, grated

1 cup buttermilk

90grams unsalted butter, melted

2 eggs

2 teaspoon vanilla essence

Icing sugar, to serve

1- Preheat oven to 180˚C. Line a 12-hole muffin tin with paper cases. Sift flour and cinnamon into a large bowl. Add brown sugar, zucchini and apple and stir to combine.

2 - Put buttermilk, butter, eggs and vanilla in a jug and whisk to combine, Make a well in centre of flour mixture. Add buttermilk mixture and stir with a fork until just combined.

3 - Spoon mixture into cases until each is 2/3 full. Bake for 15-20 minutes or until well risen, golden and firm to touch.

Dust with icing sugar to serve.


They are yummy and very easy to make.

Edit - My first lot was a disaster so before I put the next lot in to the oven I added some extra flour in to the mixture until it wasnt runny but stiff. I think my zucchini and apple were too big and I think who ever made the recipe used small ones. I am going to try the recipe with smaller ones and see how that goes. They are supposed to be moist but like normal muffins inside.
This afternoon I made a batch of Cinnamon Scrolls….
Ohhhh they were so delish!!
Will have to make some more of them too. It was great too because I got to use the dough hook on my Food Mixer. It did a great job of mixing the dough too.
