Digital magazine and muffin recipe.

Homespun magazine is now available in digital format. Now that's great news for all the overseas readers. Go HERE to subscribe and I wonder if it would be able to be viewed on one of those new Kindles?

Been thinking about these lately….wondering if I should get myself one.

A little while ago I posted about some yummy muffins I made….they were Zucchini and Apple Muffins.

I said I would give you the recipe for them and so here it is.
I got it out of the Australian Better Homes and Gardens magazine September 2011 issue.

Zucchini and Apple Muffins

Preparation Time: 15 mins

Cooking Time: 20 mins

Makes 12

Ingredients:

2 cups self-raising flour

2 teaspoons ground cinnamon

¾ cup brown sugar

1 zucchini, grated

1 red apple, skin on, grated

1 cup buttermilk

90grams unsalted butter, melted

2 eggs

2 teaspoon vanilla essence

Icing sugar, to serve

1- Preheat oven to 180˚C. Line a 12-hole muffin tin with paper cases. Sift flour and cinnamon into a large bowl. Add brown sugar, zucchini and apple and stir to combine.

2 - Put buttermilk, butter, eggs and vanilla in a jug and whisk to combine, Make a well in centre of flour mixture. Add buttermilk mixture and stir with a fork until just combined.

3 - Spoon mixture into cases until each is 2/3 full. Bake for 15-20 minutes or until well risen, golden and firm to touch.

Dust with icing sugar to serve.


They are yummy and very easy to make.

Edit - My first lot was a disaster so before I put the next lot in to the oven I added some extra flour in to the mixture until it wasnt runny but stiff. I think my zucchini and apple were too big and I think who ever made the recipe used small ones. I am going to try the recipe with smaller ones and see how that goes. They are supposed to be moist but like normal muffins inside.
This afternoon I made a batch of Cinnamon Scrolls….
Ohhhh they were so delish!!
Will have to make some more of them too. It was great too because I got to use the dough hook on my Food Mixer. It did a great job of mixing the dough too.

  1. Hi, I just had to make them for tea, but I did something wrong, they didn't rise, and inside looks like raw, but they do taste great. Are they supposed to stay moist inside? How much does the zucchini and apple weight? Perhaps that's where I went wrong? Put photo's on my blog.

    Just thought I'd mention,as buttermilk is not something a lot of ladies might just have in the fridge,and they might have the urge to bake these muffins asap - you can make a substitute by adding a tablesppon of white vinegar or lemon juice to a slightly less than a cup of milk (the tablespoon of vinegar/lemon juice should make up the difference) and stand at least 5 minutes before using. :)
    Those cinnamon scrolls sound delish as well- is that Dawn's recipe? Sandy.

    I hadn't thought about Homespun being there, but I am going to check.

  6. I love my Kindle! When they first came out I wasn't sure I'd like it, but they are so nice and easier to carry with you instead of a book. In fact, you carry your whole library with you on one of these. :)

  7. Check out the Barnes and Noble Color Nook first. There is a lot to be said about reading magazines in color. I buy my quilt books in E format now too. You can download them on your PC and print any PDF files you might need, but read them on the Nook. It sure saves a ton of space on my book shelf. They have free books every Friday too! :-)

  8. My sister showed me her new Kindle this morning. My brother in law has had one for a couple of years and uses it a lot.

  11. I got a kindle last year for Xmas and love it. I wold recommend a cover with the light in it also. Great for whent he light gets low or you are in bed.
